During the years Baptiste Loiseau spent perfecting his craft side by side with his predecessor he tasted every eau-de- vie that had been set aside by the previous Cellar Masters for their exceptional ageing potential. Through a lengthy process, he was able to identify the treasures of the Maison so that when he became Cellar Master of Rémy Martin, the House granted him carte blanche to reveal his selection of these treasures to the world. For this second edition of Carte Blanche, Baptiste wanted to illustrate the unique character of Rémy Martin with an original blend. He carefully selected this Cognac Fine Champagne from the vast and varied collection housed in the Merpins cellars. Matured in a single vat, it perfectly embodies the spirit of the House. Bottled at the percentage proof naturally occurring in the vat, the original structure of the blend is completely preserved. Releasing delicate notes of plum and gingerbread, the eaux-de-vie reveal how time has worked its magic. The striking finish on the palate is wonderful combination of sweet spices with cinnamon and honey notes. A smooth cognac with remarkable aromatic presence, the epitome of the Rémy Martin style. My Dad was a purveyor of fine wines and liquors in NYC. He sold many Frank Schoonmaker selections and was given an opportunity of being one of the few stores in NYC to receive Madame Gaston Briand PARADIS, as it was a limited, rare reserve. Ken Onish I believe if my memory serves me correctly, facilitated the deal with the Proprietors of Gaston Briand in France. Only several case came to the US and Sherry Lehman and Gansvoort were the only two to receive this very rare treat. When my dad was ready to sell the business, he gave each of his children one bottle of Paradis and one bottle of Gaston Briand cognac. We have stored them, ever since, according to my dad's instructions. Upright, dark place, always near to our hearts! they are over 30+ years old.
